Low-carb, gluten-free and full of flavor
These Thai peanut lettuce boats bring all the flavor of Thai food, with none of the guilt. I have paired them with a low-carb noodle, called Pasta Zero - which has only 5g carbs per serving.
For the noodles, I would recommend running them under hot water in a strainer for several minutes - this will ensure they taste the best they can!
Thai Peanut Lettuce Boats - yields 4 servings
Ingredients
1 1/2 lbs of ground turkey or pork
1/8 c soy sauce
2 tsp garlic paste or minced garlic
1/2 tsp garlic salt
1/4 tsp ground ginger
1/2 c natural creamy peanut butter
1/2 c Asian Sesame salad dressing
1/4 c warm water
2 tsp red chili paste
1 head green leaf lettuce
3/4 c shredded carrots
3 green onions, chopped
1/2 c cilantro, chopped
2 bags of Pasta Zero Shirataki Noodles
2 shallots, diced
1 Tbsp olive oil
Instructions
Brown meat in a pan with garlic, soy sauce, garlic salt and soy sauce until cooked through.
Combine the peanut butter, dressing, warm water and chili paste together in a bowl and whisk until smooth. Reserve 1/4 cup of the sauce to the side.
Rinse noodles in a strainer under hot water for 2-3 minutes. Combine the diced shallots and olive oil in a pan and cook until tender. Add the Shirataki noodles and cook until hot. Stir in the reserved 1/4 cup of peanut sauce.
Rinse lettuce leaves, and chop green onions and cilantro.
Top lettuce leaves with meat, carrots, green onions, cilantro and peanut dressing. Serve with noodles on the side.
