Sweet Chili Chicken Rice Bowls - dairy free option

Fast and easy weeknight dinner idea - loaded with veggies and flavor


If you're anything like me, sometimes making dinner is the last thing I want to do by the end of a busy week day. This recipe is so fast and easy to make. It's a fusion of a salad and a typical rice bowl - giving you the energy you need to keep going.


I prepared it to be dairy free, but you can also use normal ranch dressing for the sauce.


Sweet Chili Chicken Rice Bowls (makes 6)


Ingredients

2 c of Jasmine Rice (use the 90 second ready rice if you're in a hurry)

1 rotisserie chicken, separated and chopped

1 12 oz bag of edamame, shelled

1 5 oz package of spring mix/salad of choice

1 1/2 c shredded carrots

2 avocados, diced

1/2 c ranch dressing (I used Hidden Valley plant-based ranch for a dairy-free option)

1/4 c sweet chili sauce

1/4 c cashews

2 Tbsp lime juice




Instructions

  1. Cook instant rice, or prepare in a rice cooker.

  2. Mix ranch dressing and sweet chili sauce until well combined.

  3. Assemble bowls by scooping in rice, and topping with lettuce, chopped chicken, edamame, carrots, avocado and cashews.

  4. Top with salad dressing and lime juice to taste.
