Prosciutto Fig Thin-Crust Personal Pizzas

Fast and easy, sweet and savory pizzas


Pizza night was just leveled up a notch with these fast and easy personal pizzas, complete with fig spread, prosciutto, gorgonzola, spinach, parmesan and fresh basil. The flavors are rich and savory - the best part - they are super fast and easy to make!


I used thin personal pizza crusts for this recipe, but you can easily swap them out for fresh pizza dough or larger prepared crusts.


Prosciutto Fig Thin Crust Personal Pizzas- yields 3 personal pizzas


Ingredients

3 thin personal crusts ( I used Kroger )

3 oz package of thin sliced prosciutto, cut into pieces

1/2 onion, diced

1 Tbsp olive oil

1/2 c fig preserves

1 c baby spinach

1 c grated parmesan

1/2 c gorgonzola cheese

3 Tbsp fresh chopped basil



Instructions

  1. Preheat oven to 425 degrees F. Place pizza stone in oven while it preheats.

  2. Cook diced onion in olive oil until tender. Season with garlic salt or salt, if desired.

  3. Once oven is preheated, spray crusts with cooking spray and cook in oven for 5 minutes. Remove from oven, and flip crusts.

  4. Spread ~2 tablespoons of fig preserves on each crust. Top with parmesan, spinach, prosciutto, onions and gorgonzola.

  5. Cook in oven for 10-12 minutes, or until cheese is melted and prosciutto appears slightly crisp.

  6. Garnish with chopped basil and enjoy!
