Perk Apple Pie French Toast

High-protein, low-carb breakfast

Getting diagnosed with gestational diabetes during the fall has been challenging - I am a sucker for warm, comfort foods and all of the fall spice flavors!


I have not given up on discovering ways to satisfy my fall cravings! I am just getting more and more creative :)


I was so excited as I created this apple pie french toast experience! The best part - two slices of french toast, covered in a creamy apple pie topping and sugar free syrup - served with a couple chicken sausage links on the side boasts 28 grams of protein, and 27 grams of carbs - total balanced breakfast win!


Perk Apple Pie French Toast - serving for 1


Ingredients


1 egg

1 Tbsp Fairlife 2% milk

2 slices of Sara Lee Delightful bread

1/4 tsp cinnamon

1/8 tsp nutmeg (or to taste preference)

1/2 tsp vanilla

2 Tbsp sugar free maple syrup


Topping

1/3 c nonfat plain Greek yogurt

1/4 scoop Perk Apple Pie a la Mode (I used Perk Chill - use PERKFAMTABRIE for a 10% discount on your order)

Dash of cinnamon


Side

2 Applegate chicken sausage links


Total carb and protein breakdown: 27 c, 28 p




Instructions


For the topping

  1. Combine the yogurt, Perk Apple Pie powder and cinnamon - mix until smooth.

For the french toast

  1. Whisk the egg, milk, cinnamon, nutmeg and vanilla in a bowl.

  2. Preheat griddle or pan.

  3. Grease griddle or pan.

  4. Dip your bread slices in the mixture, and transfer to preheated griddle or pan. Cook until golden on each side.

  5. Top the french toast with the yogurt mixture and syrup.

  6. Optional: can add fresh apple slices or berries

My journey with gestational diabetes

I have always struggled with hypoglycemia, and have spent the past 12 years looking for creative ways to always balance my protein and carb intake for balanced blood sugar levels. Although hypoglycemia deals with low blood sugar, while gestational diabetes causes high blood sugar if not managed properly, both require careful attention to balancing my protein and carb intake.


Cooking has always been a passion of mine, and now I get to discover new ways to hit my protein and carb goals, while not giving up any quality of flavor! Each meal, I have a goal to stay between 25-35 grams of carbs, and 25-30 grams of protein. If I feel like I need extra energy, I can add extra carbs to each meal, up to 45 grams of carbs per meal, based on my dietician's guidance.


Rather than feeling frustrated and limited by my gestational diabetes diagnosis, I am spending my time exploring creative low-carb, high-protein snacks and meals and will be documenting my journey along the way. I am not a medical professional, and suggest each woman diagnosed with gestational diabetes works with a qualified nutritionist to meet her goals. My goal is simply to share my journey and what is working for me as I live with gestational diabetes.


I will not be sharing the complete macros of each meal that I share - rather the carb and protein breakdown for each.
