4 ingredient energy bites with added fiber | Great for nursing moms
As a nursing mom, I am always looking for clean recipes to fuel my body and keep me energized! I have always loved the convenience of mixing up some energy bites to keep in the fridge and grab whenever I need a quick snack. These power bites are also husband and toddler-approved at my house! My daughter even calls these cookie balls.
The oats and flaxseed offer many lactation benefits for nursing moms, and offer clean energy benefits for anyone else enjoying these snacks!
You can use the jam/jelly of your choice - we went with a homemade raspberry jam! I always use creamy natural peanut butter, but any other creamy peanut butter will work.
For a gluten-free snack, use certified gluten-free oats.
Peanut Butter and Jelly Power Bites (Makes about 45 1-inch bites)
Ingredients
3 cups of oat flour (about 1.5-2 cups of Old Fashioned Oats processed into a fine flour)
2 cups of natural creamy peanut butter
1 cup of honey
1 Tbsp ground flaxseed
1/3 cup of jam/jelly of choice
Instructions
Process Old Fashioned Oats into a fine flour using food processor or blender. Process into 3 cups of oat flour.
Combine oat flour, peanut butter, honey and ground flaxseed in standing mixer - mix until smooth.
Using a 1 inch cookie scoop, scoop out a round of the mixture. Using your finger, press out a crater in the center and spoon in a small amount of jam. Seal off the edge with a pinching motion (almost making a spine). Carefully round out the ball by rolling between your palms.
Store the energy bites in the fridge, and enjoy!
