Fast and easy Greek-inspired rice bowls
These Greek-inspired chicken rice bowls are fast, easy and loaded with flavor! Not to mention they are a light option that will leave you feeling energized.
Greek Chicken Rice Bowls- yields 4 servings
Ingredients
3/4 cup jasmine rice, uncooked
2 Tbsp olive oil
6 boneless, skinless chicken thighs
1 pint of grape tomatoes, halved
1 English cucumber, diced
1 cup of crumbled feta cheese
1/2 cup Greek vinaigrette salad dressing
Greek seasoning
Instructions
Cook jasmine rice according to directions.
Heat pan with olive oil and cook chicken thighs until browned. Season with Greek seasoning. Cut into bite-size pieces.
Chop tomatoes and cucumber, set to the side.
Top 1/2 cup of cooked rice with chopped chicken, tomatoes, cucumbers and feta. Drizzle with Greek salad dressing and sprinkle with Greek seasoning.
Can garnish with fresh basil, if desired.
