5-Ingredient Ground Beef Enchiladas

Fast and easy, with a low-carb option!


I love enchiladas, and this simple, 5-ingredient recipe is perfect for a quick weeknight dinner. Not to mention, you may already have many of these ingredients on hand! You can roll your enchiladas up in corn or flour tortillas, or for a low-carb option, use a low-carb or keto tortilla wrap.


5-Ingredient Ground Beef Enchiladas


Ingredients

1 lb ground beef or ground turkey

1 28-ounce can of mild red enchilada sauce

1/2 white or yellow onion, diced

2 cups shredded Colby Jack cheese

8 low-carb tortillas (corn or flour tortillas work as well)


Optional: tomatoes, sour cream and guacamole for topping







Instructions

  1. Preheat oven to 400 degrees F. Spray a 9x12 baking dish with cooking spray.

  2. On the stovetop, add the chopped onion and ground beef to a pan and cook until meat is browned and onion is tender.

  3. Add 1/2 of the can of mild red enchilada sauce. Cook for 5-10 minutes until the sauce reduces and thickens.

  4. Spoon the meat mixture into tortillas - roll each one up and place in the 9x13 baking dish. Once the pan is filled, cover the enchiladas with the remaining sauce and the cheese.

  5. Bake for 15-20 minutes, or until the cheese is melted and bubbling.
